  1. Place chestnuts, flat side down on a cutting board.
  2. Cut an X 1/8” deep on the full surface of the round side. Place in a bowl of hot water for about 15 minutes.
  3. Place a piece of foil on a sheet pan, put chestnuts in
  4. the center, and draw up the sides to resemble a volcano (hole at the top).
  5. Put sheet pan on a middle rack in the oven and
  6. roast for 45 minutes.
