  1. Preheat the oven to 350 o F. Butter a 9-inch ceramic baking dish.
  2. Bring the water to a boil. Combine the oat bran cereal, steel-cut oats and coconut oil in a large bowl. Pour the boiling water over contents of the bowl, and let sit for about 20 minutes.
  3. Add remaining ingredients, except for the walnuts and stir to mix.
  4. Bake at 350 o F. for 50 – 60 minutes until center of pudding does not jiggle when shaken. Sprinkle the walnuts on top.
  5. Serve topped with yogurt and maple syrup.
